Strawberry Festival

We went to the Strawberry Festival in AG on Saturday. We had a lot of fun!

We got to ride the free bus shuttle over to the Festival. This was Izzy and Darby’s first bus ride. They loved it!

Darby wanted to keep looking out the window instead of at the camera. I don’t blame her.

These guys were a lot of fun to watch. (I love free entertainment!!!)

These camels looked…well…pretty disgusting. Ha ha! We had never seen camels in real life though, so it was kinda cool. I was glad none of the girls wanted to go for a ride.

This is the only group picture we took. I didn’t want to ask the lady to take it again even though it’s so horrible. Oh well! :-)

We went back home after having lots of fun and only spending $4.00! Joe and I were pleasantly surprised.

This is the first year we’ve taken the kids that we didn’t have to bring a stroller. I love this new season of life. :-D

Have you ever read ‘Flowers for Algernon’?

The eponymous Algernon is a laboratory mouse who has undergone surgery to increase his intelligence by artificial means. The story is told by a series of progress reports written by Charlie Gordon, the first human test subject for the surgery, and it touches upon many different ethical and moral themes such as the treatment of the mentally disabled.

I read this book in grade school. (I should read it again.) I think about this book pretty often. Sometimes I have moments of clarity but usually I feel very frustrated that I can’t make sense of myself and feelings.

I can relate to this mentally disabled test subject.

Dinner Excitement

I am so excited about dinner tonight! I just found a recipe that looks amazing! Pineapple Quinoa, this is my first attempt at making quinoa. It seems easy enough.

I made a Vegan Thai Peanut Stir-Fry 2 nights ago. Yummy, yummy, yummy! I made it quickly before work and then ate it while I set up the restaurant. Joe and the girls loved the sauce, brown rice and peanuts. Joe said that he had a hard time getting the kids to eat the veggies though.

I took this picture at a stop light on my way to work. Ha ha! I took one bite and then had to record such a delicious meal.

I can’t find which site I got this recipe from. I copied and pasted it to a Word Doc and now I can’t find it online. Boohoo! I want to try more recipes from wherever I got it from. Here it is:

Vegetarian Thai Peanut Stir-Fry

You need not use the veggies I have outlined in the ingredient list. Use up whatever you have in the house. Add some diced pineapple. Or maybe some baby corn, some green beans, some snap peas or even some bamboo shoots. You could also add diced tofu to boost the protein value of this dish. Enjoy!

Ingredients

  • 2 cloves of garlic; minced
  • 1 teaspoon of vegetable or canola oil
  • 1 tablespoon of vegetable or canola oil
  • 1 tablespoon of fresh ginger; grated (or 1 teaspoon of ground ginger)
  • 1/2 cup of low-fat peanut butter (creamy kind is best)
  • 1/4 cup of rice wine vinegar
  • 1/4 cup of honey (or agave syrup if you are making this vegan)
  • 1/4 cup of soy sauce
  • 1/2 cup of water or vegetable stock
  • 1 heaping tablespoon of chile/garlic paste
  • 1 red pepper; chopped
  • 1 yellow pepper; chopped
  • 2 carrots; peeled and chopped
  • 1 large zucchini; chopped
  • 1 bunch of broccoli; cut into small pieces
  • brown rice/basmati rice or angel hair pasta
  • peanuts

1. In a large fry pan, heat the tablespoon of vegetable/canola oil over medium heat. Add the chopped carrots and peppers and sauté for 5 minutes. Add the zucchini after 5 minutes. Reduce heat to medium-low. Stir veggies every so often while making the sauce. Note: now is a good time to start cooking your rice or putting a pot of boiling water on for your angel hair pasta.

2. Meanwhile, in a small saucepan over medium heat, heat the 1 teaspoon of vegetable/canola oil and sauté the garlic and ginger for 1 minute ensuring you don’t burn the garlic. Add the peanut butter and allow it to melt slightly. Once melted, add the water, the soy sauce, the rice vinegar, the honey and the chile/garlic paste. Stir well and reduce to low heat.

3. Add the broccoli to the fry pan. Pour the sauce over the vegetables. Cook for about 3 minutes; or until the broccoli is just slightly tender.

4. Serve the stir-fry vegetables & sauce over either cooked rice (brown, basmati, jasmine etc) or angel hair pasta. Garnish with peanuts. Cashews would also work well for this recipe.

 

I think I might…be starting to like…cooking!  :-D How can this be?! I’ve always hated spending time in the kitchen unless I was baking.

I’m realizing I can be in control, eat healthy, and eat yummy stuff.

Veggies will be much more common in our home.

A Life Lived Fully

Our friend Mike Starnes went to be with the Lord at 10:40 AM. We’ll miss you Mike! We can’t wait to see him again on the better side of eternity! Our hearts are with his wife and daughters as well as the rest of his family and friends.

Too much on my mind.

I tried to go to sleep early tonight, I really did. I gave it a good shot. Now I have taken some Benedryl so hopefully I’ll drift off after I record some thoughts. Thoughts. Too many racing through my mind.

My friend’s husband had a massive stroke.          Caught off guard.

My friend’s 2 foster babies given back to their birth parents.           Unworthy to be parents.

The JW trying to argue with me at the grocery store who Jesus is.               Jesus is not “a god” but the Triune God!

The Lord’s prayer keeps swimming through my head.

God’s sovereignty is such an complex thought. Isn’t it awesome that we serve a God so great that we humans can’t even understand?! If we could understand then He wouldn’t be so great.
